Sauteed Brussels Sprouts PDF Print E-mail

We had this dish at a tapas restaurant in Santa Barbara and it was amazing. This simple recipe is so good we think it may even win over the non-Brussels sprout eater. Since olive oil, salt and pepper are the only ingredients, be sure to use a good Spanish olive oil and sea salt and large Brussels sprouts for the best results.

Rinse of the Brussels sprouts and cut off the bottom. Remove the outer layer of leaves. Cut them lengthwise into thirds or quarters depending on their size.

Warm the olive oil in a pan over medium high heat. When hot, but not smoking, add the Brussels sprouts and season well with the sea salt and pepper. Saute until they are slightly browned but are still crunchy. Drizzle with some more olive oil and serve.
