This is a quick variation on white rice that goes well with Latin American, Mediterranean, or Indian style dishes.

White Rice
1 Cup White Rice
Chicken Stock 2 Cups Chicken Stock
Limes 2 Limes
Green Onions 2 Green Onions
Olive Oil 1 Tbs Olive Oil
Cilantro Cilantro (optional)
Lime Rice Lime Rice

Zest the limes and chop the green onions.

In a sauce pan heat the olive oil over medium-high heat. Add the rice and stir. Let it cook for two minutes stirring every thirty seconds. Add the chicken stock and lime zest. Let it boil and then reduce heat to a simmer. Cover and let cook for eighteen to twenty minutes.

Take the sauce pan off the heat. Stir in the green onions and the juice of one of the limes. Top with some chopped cilantro if you're making Mexican food.

Cook Time: 20 minutes
