Fried rice is always a must order in a Chinese restaurant but is not a dish that many people make at home. The key is making the white rice the day before.

Cooked White Rice
6 Cups of Cooked White Rice
Shiitake Mushrooms Shiitake Mushrooms
Snow Peas Snow Peas
Green Onions 4 Green Onions
Eggs 2 Eggs
Garlic 2 Cloves Garlic
Oyster Sauce 1/4 Cup Oyster Sauce
Soy Sauce 1 Tbs Soy Sauce
Peanut Oil 3 Tbs Peanut Oil

Cook the rice the day before and then store in the refrigerator overnight. Use chicken stock instead of water to cook the rice for extra flavor.

Chop the mushrooms in half or thirds. Chop the green onions (green and white parts) finely and mince the garlic. Beat the eggs. Mix the oyster and soy sauce together.

Heat one tablespoon of peanut oil in a skillet over medium heat. Cook the eggs (scrambled) but don't let them brown. Remove to a bowl.

Add two tablespoons of peanut oil to the skillet and add the mushrooms and peas. Cook for two minutes. Add the garlic and cook for thirty seconds. Add the rice and the oyster and soy sauce. Cook for five minutes, stirring two or three times. Add the cooked eggs and green onions and cook for another minute.
