This is a great sandwich if you feel like going meat free for a night.

Portabella Mushrooms 2 Portabella Mushrooms

Red Bell Pepper 1 Bell Pepper
Brie Brie
Garlic 1 Clove Garlic
Olive Oil Olive Oil
Salt and Pepper Salt and Pepper

Rinse off the mushrooms. Mince the garlic clove. Coat the mushrooms with olive oil and then season with salt and pepper. Sprinkle the garlic over them.

Heat olive oil in a skillet over medium heat. Chop the onion into rings and add to pan. Add a pinch of salt and pepper. Saute until caramelized.

Heat a grill pan over medium-high heat. Toast four slices of bread on the grill.

Place the bell pepper on the grill and let each side blacken. Remove from grill.

Place the mushrooms on the grill stem side up. Cook five minutes then flip. Cook for another minute and then top with brie. Cover and let the cheese melt.

Remove the blackened skin from the bell pepper and then cut in half.

Assemble the sandwich by placing half of the bell pepper on a piece of bread followed by the mushroom. Top with the caramelized onions.

Cook Time: 25 minutes
