This is a tasty beet salad recipe that is simple enough to make on a weeknight.

Beet and Burrata Salad Beet and Burrata Salad

Roast and peel the beets (this can be done ahead of time). Cool in the fridge. Cut into rounds. Cut the burrata into rounds that are about the same size as the beets.

On a plate put down a bed of wild arugula. Layer the beets and burrata in a couple of rows on the arugula. Juice the lemon over everything. Season with freshly ground pepper. Drizzle the basil oil over the rows of beets and cheese.
