This is as basic of a Spanish recipe as you can get. It works as an appetizer for almost any meal any time of the day.

Baguette 1 Baguette
Tomato 1 Tomato (very ripe)
Garlic 1 Clove Garlic
Salt and Pepper Salt and Pepper
Pan con Tomate Pan con Tomate

Slice the baguette into 1/3 of an inch slices. Toast on a grill pan or in the oven.

Shred the tomato into a bowl with a cheese shredder. Mince the clove of garlic and add to the tomato along with a pinch of salt and pepper. Stir.

Top the bread with the tomato mixture and serve.

We also like to top the tomato with various other items such as Manchego cheese, prosciutto (or Spanish jamon if you can find it), or anchovies.
