Basil oil is great for adding flavor or color to Italian and Spanish dishes.

 

Basil 1 1/2 Cups Basil
Olive Oil 1/2 Cup Olive Oil
Salt Kosher Salt
Basil Oil Basil Oil

Rinse the basil and then blanch in boiling water for fifteen seconds. Drain completely and add to a blender with the olive oil. Blend until smooth.

Pour into a bowl (through a strainer if you want to remove the leaves) and stir in salt to taste.
