Roasting beets brings out wonderful flavor which you don't achieve by boiling.

Cut off the root (if still attached) and trim the greens at the stem just above the bulb. Rinse off and pat dry.

Set the beets on a square of aluminum foil (if multiples colors of beets wrap each color by themselves) and drizzle with some canola oil. Sprinkle on some salt and pepper and then wrap tightly.

Place the packets on a baking sheet into a 350 degree oven and cook for thirty minutes or until the beets are tender enough to be easily pierced with a sharp knife. Remove from the oven, open the packets, and let cool.

Chop of the top (rest of the stem) and bottom of the beets and then peel away the skin.

Cook Time: 30 minutes
