These are my favorite stuffed mushrooms. Nothing fancy but very tasty. As children these were always a favorite around the holidays!

16 Mushrooms
Italian Sausage 1 lb Italian Sausage
Green Onion 3 Green Onions
Cheddar Cheese 1 Cup Grated Cheddar Cheese
Water 1/4 Cup Water

Rinse off the mushrooms and carefully remove the stems. Finely chop a few of the stems for the stuffing.

Chop up the green onions. Reserve some for garnish.

Heat a skillet over medium heat. Add the chopped green onions and the chopped mushroom stems. Saute for a minute before adding the sausage. Brown the sausage and break up into small pieces. Remove from heat and stir in the cheese.

Place the mushroom caps into a baking dish and spoon in the stuffing mixture. Add the water to the bottom of the pan.

Bake at 375 degrees for twenty minutes. Remove and let cool for about ten minutes. Garnish with green onion.
