Skirt steak is a cheaper cut of beef that can be good if cooked properly and served with a sauce. This is an easy way to cook it during the winter when you don't feel like grilling.

Shallots 3 Shallots

Carrots 3 Carrots
Mushrooms 4 Mushrooms
Leek 1 Leek

Chop the onion, carrots, leek, and mushrooms and crush the garlic. Add them to a saucepan with the wine and thyme and let simmer for forty-five minutes. Add the beef stock and simmer for another thirty minutes. Strain.

Thinly slice the shallots.

Heat an oven proof skillet over medium-high heat. Season the skirt steak with salt and pepper. Cook in the skillet until brown about two minutes a side. Remove to a plate and add to the skillet the shallots along with some thyme leaves and some salt and pepper. Cook until caramelized about three to four minutes. Remove to a bowl and return the steaks back to the skillet. Cover with the shallots and put in a 375 degree oven for five minutes.

Remove the steaks from the oven and serve with the sauce and some fries.
