Skirt steak is a cheaper cut of beef that can be good if cooked properly and served with a sauce. This is an easy way to cook it during the winter when you don't feel like grilling.
Chop the onion, carrots, leek, and mushrooms and crush the garlic. Add them to a saucepan with the wine and thyme and let simmer for forty-five minutes. Add the beef stock and simmer for another thirty minutes. Strain. Thinly slice the shallots. Heat an oven proof skillet over medium-high heat. Season the skirt steak with salt and pepper. Cook in the skillet until brown about two minutes a side. Remove to a plate and add to the skillet the shallots along with some thyme leaves and some salt and pepper. Cook until caramelized about three to four minutes. Remove to a bowl and return the steaks back to the skillet. Cover with the shallots and put in a 375 degree oven for five minutes.
