This preparation of beef ribs is probably illegal in Texas but I've only ever had compliments. It involves simmering the ribs until tender and finishing off on the grill.


Raw Beef Ribs
2 Racks Beef Ribs
Beers 6-8 Beers
Water Water
Onion 1 Onion
Garlic 6 Cloves Garlic
Peppercorns 1 Tsp Peppercorns
Bay Leaves 2 Bay Leaves
Barbecue Sauce Barbecue Sauce
Barbecued Beef Ribs Grilled Beef Ribs

Rinse of the rack of ribs. With a butter knife remove the pleura (papery tissue on back of ribs).

Cut the racks of ribs in half. Add to a large stock pot. Chop the onion and mince the garlic. Add to the pot along with the peppercorns and bay leaves. Add the beers and water until the ribs are just covered.

Bring the pot to a boil and then reduce to a simmer. Let it simmer for two to two and a half hours at which time the ribs should be nice and tender. Remove from the pot and let cool. Cover both sides with barbecue sauce and put on a hot grill. Cook eight minutes a side basting with barbecue sauce once. Serve with extra barbecue sauce on the side.
