The flavor from this chili comes from the bacon, beer, and most importantly, using real chiles.

Bacon 12oz Bacon
Ground Beef 2 lbs Ground Beef
Onions
2 Large Onions
Garlic 1 Head of Garlic
Chile Peppers Seven Chile Peppers
Kidney Beans 1 Can Dark Kidney Beans
Diced Tomatoes 2 Cans Diced Tomatoes
Beer 2 Beers
Chili Powder 6 tbs Chili Powder
Cumin 2 tbs Cumin
Pepper 1 tbs Ground Pepper

Chop the onions and mince the garlic. Clean out the chiles making sure that you get all of the seeds and then finely chop. You don't need to do seven chiles if you don't want to. Be sure to include the habanero as it adds the best flavor and isn't too spicy when you remove the seeds. You basically want to use equal parts chiles and garlic.

Cook the bacon in a skillet. Remove the bacon and in the fat brown the ground beef with the onion, garlic, and chiles. Do two batches if you need to. Remove to a stock pan with a slotted spoon leaving behind the liquid.

Drain the juice from the kidney beans and add to the stock pan. Add the diced tomatoes and the beer. You can use whatever your favorite beer is. I prefer using Guinness but I'll use an American Lager if that is all I have on hand. Chop up the bacon and add to the pot. Stir in the chili powder, cumin, and ground pepper.

Simmer covered for about two and a half hours and then remove the lid and cook for another hour or until it has reduced to your desired thickness.

Serve with freshly grated cheddar cheese, chopped onion, and hot sauce.
