Grilled Lamb Chops PDF Print E-mail

Lamb chops are not a cheap dish but they are as visually appealing as they are tasty. A great dinner for a holiday or special occasion. This is a simple marinade that enhances but doesn't overpower since lamb is so tasty in its own right.

Garlic 3 Cloves Garlic
Rosemary 3 Sprigs Rosemary
Lemon 1/2 Lemon
Salt and Pepper Salt and Pepper

Finely chop the rosemary and mince the garlic. Add to a bowl with a couple pinches of salt and pepper. Add about a teaspoon of lemon juice and then enough olive oil so you end up with a paste. Coat the lamb chops with the paste and let rest for twenty minutes. You want them to be room temperature when they go on the grill.

Place the lamb chops on a hot grill for two minutes a side. Move to a cooler section of the grill and cover. For medium rare let them cook for another three minutes a side. Be careful not to overcook!
