Cornish game hens are a simple but elegant poultry dish for a dinner party.

Lemons 2 Lemons

Rosemary 2 Tbs Chopped Rosemary
Thyme 1 Bunch Thyme
Olive Oil 2 Tbs Olive Oil
Pepper 2 Tsp Pepper
Salt 2 Tsp Salt

Take the stick of butter out of the refrigerator to let it soften. Preheat the oven to 450 degrees.

Rinse out and pat dry the hens. Cut out the wishbone. Leave the hens out while you prepare the butter mixture to let them come up to room temperature.

In a bowl mix the butter with the zest and juice of the lemons, the rosemary, two of the garlic cloves (minced), one teaspoon of salt, and one teaspoon of pepper. Loosen the skin above the breasts and stuff with some of the butter mixture. Stuff the remainder between the thighs and the body.

Put the hens into a roasting pan breast side up and surround with the thyme and other garlic cloves. Brush the hens with olive oil. Season with salt. Surround the hens with the rest of the garlic and sprigs of thyme.

Cook until the temperature of the meat between the thigh and the body registers 160 degrees and the juices run clear, about 30 to 40 minutes.
