These braised lamb shanks are a great meal no matter what the season is. They don't require much prep and pretty much take care of themselves.

Lamb Shanks 2 Lamb Shanks
Carrots 3 Carrots
Celery 2 Stalks Celery
Onion 1 Large Onion
Garlic 4 Cloves Garlic
Red Wine 1 1/2 Cups Red Wine
Olive Oil
2 tbsp Olive Oil
Salt and Pepper
Salt and Pepper
Braised Lamb Shanks Braised Lamb Shanks

Heat olive oil in a Dutch oven over medium high heat on the stove. Liberally season lamb shanks with salt and pepper. Add to Dutch oven and brown on all sides. Add chopped carrots, chopped celery, chopped onion and crushed garlic. Add wine. Cover and put in a 225 degree oven. Cook for an hour and a half. Flip lamb shanks and cook for another hour and a half.

Strain the liquid from the bottom of the pan and reduce in a sauce pan.

Cook Time: 3 hours
