This colorful dish was inspired by a good friend of ours (hi Cara Lyn!) and her sausage and peppers recipe. We added some zucchini which soaks up the sausage juices nicely.

Italian Sausage 1lb Italian Sausage
Bell Peppers 2 Bell Peppers
Zucchini and Squash Zucchini or Squash (or both)
Garlic 2 Cloves Garlic
Olive Oil Olive Oil

1 tsp Turmeric

(or 1/2 tsp ground saffron if you're feeling rich)

Salt and Pepper Salt and Pepper

Cut the sausage into 3/4" pieces. Warm a skillet over medium high heat and add the olive oil. When the oil is warm begin browning the sausage.

Cut the bell peppers into 1/2" wide strips and add to the sausage once it has browned a bit. Cut the zucchini into wedges and add to the sausage and peppers. Continue cooking until the sausage is cooked and the bell peppers and zucchini have softened. Be sure to stir throughout to keep everything cooking evenly.

Add the garlic, saffron, and salt and pepper. Cook for another minute or two while stirring. Serve.
