This is a wonderful one-dish meal for a work night.

Raw Chicken

1 Whole Chicken
White Potatoes
1 lb White Potatoes
Onions 2 Onions
Garlic
4 Cloves Garlic
Rosemary 3 Sprigs Rosemary
Olive Oil Olive Oil
Salt and Pepper Salt and Pepper

Remove the innards from the chicken. Rinse out and pat dry. Cut the potatoes in half and quarter the onions. Dice one quarter of one of the onions and combine with some of the minced garlic and salt and pepper.

Spread the potatoes and onions over the bottom of a large baking dish. Cover with olive oil and season with salt and pepper and the rest of the minced garlic. Break up two of the rosemary sprigs over the potatoes.

Season the outside of the chicken with salt and pepper. Stuff with the onion and garlic mixture and the remaining sprig of rosemary.

Place the chicken breast side down on the potatoes and put into a 375 degree oven. Cook for 45 minutes and then flip the chicken breast side up. Cook for another ten or fifteen minutes or until the juices run clear when poked near the inner thigh.
