This is my brother's recipe for smoked salmon which is always a hit at parties.

Salmon Fillet Salmon Fillet (skin on)
Lemon 1 Lemon

Smoked Salmon Smoked Salmon

Start soaking about two cups worth of wood chips.

Rinse the salmon fillet and pat dry. Squeeze one whole lemon over the salmon and then season heavily with salt and pepper.

Prepare your grill with a small amount of charcoal on one side. Let it burn down until the coals are white and there are no flames.

On the grill, opposite of the charcoal, lay down a piece of aluminum foil and place the salmon on top of it with the skin side down.

Add a handful of the wood chips to the charcoal and cover. Let smoke. Continue this process until you are out of wood chips and the salmon is cooked through but still tender, about an hour and a half to two hours. Serve with creme fraiche and Ritz crackers.

Cook Time: 1 hour 30 minutes
