Paella is one of those quintessential Spanish dishes that everybody should try. It might sound intimidating but is actually quite simple to make.

Arborio Rice 2 Cups Arborio Rice
Raw Shrimp 1/2 lb Large Shrimp
Squid 1/2 lb Chopped Squid
Mussels 1/2 lb Mussels
Tomato 1 Ripe Tomato
Sweet Onion 1 Sweet Onion
Fish Stock 8 Cups Fish Stock
Salt 1 tsp Salt
Saffron 1 tsp Saffron
Paprika 1 tbs Paprika
Extra Virgin Olive Oil 1/2 Cup Extra Virgin Olive Oil

Grate the tomato into a bowl with a cheese grater. Peel and devein the shrimp. Chop the onion.

Heat a large skillet over medium-high heat and add the olive oil. Heat the olive oil until smoking and then add the onion. Cook until the onion has softened which should take about three or four minutes. Add the tomato, salt, saffron, paprika, and squid. Stir and cook for about five minutes.

Add the fish stock and bring to a boil. Let it boil for five minutes before adding the rice and mussels. Stir once and then let cook for ten minutes. Add the shrimp, stir, and cook for another fifteen minutes without stirring.

Remove from heat and let rest for ten minutes. Drizzle with a little extra olive oil
