Steelhead are a beautiful alternative to salmon. This simple method of preparing it captures the fresh, mild flavor.
Rinse and pat dry the steelhead fillets. Season with salt and pepper. Heat the olive oil in a skillet over medium-high heat. Add the butter and melt. Add the steelhead flesh side down. Cook for two minutes. Flip and cook for another four minutes depending on thickness. Spoon the fat from the pan over the steelhead as it cooks. Serve with a slice of lemon.
