Halibut and mashed potatoes is one of our favorite halibut dishes. This is a bit of a change up of that dish but it still is a juicy piece of fish on a bed of potatoes.


1 lb Halibut
Yukon Gold Potatoes 1 lb Yukon Gold Potatoes
Garlic 8 Cloves Garlic
Crushed Red Pepper 1 Tsp Crushed Red Pepper
Red Wine Vinegar 3 Tbs Red Wine Vinegar
Olive Oil 1/3 Cup Olive Oil
Salt and Pepper Salt and Pepper
Halibut on Potatoes Halibut on Potatoes

Boil the potatoes until they are just done (about 20 minutes). Drain and let cool.

Thinly slice the garlic. Add to a sauce pan with the olive oil. Cook for two minutes over medium-low heat. Remove the garlic to a bowl and add the crushed red pepper and red wine vinegar. Cover and cook for another two minutes. Turn off the heat.

Cut the potatoes into 1/4" rounds. Lay over the bottom of a over proof skillet (preferably cast-iron). Spoon a couple tablespoons of the olive oil and vinegar over the potatoes and spread around half of the garlic. Place the halibut on the potatoes and season with salt and pepper. Pour the rest of the olive oil and vinegar over the halibut and spread the rest of the garlic over it.

Place into a 500 degree oven and cook for twelve minutes or until you can flake the halibut with a fork.
