This is a great dish that can be used as an appetizer or the main course.

Raw Scallops Sea Scallops
Butter 1 tbs Butter
Salt and Pepper Salt and Pepper
Scallops and Mashed Potatoes Seared Sea Scallops

Season the scallops with salt and pepper. In a large saute pan, heat 1 tablespoon butter over high heat until it shimmers but does not smoke. Add the scallops and cook until browned on the bottom, about 2 minutes (slightly less for smaller scallops). Turn and cook until the other side is browned, about 1 to 2 minutes, Serve on top of a dollop of creamy mashed potatoes. Enjoy!
