This is one of our favorites from my mom.

Salmon Fillet

1 ½ pounds fresh salmon fillets


6 tablespoons butter, divided


½ pound fresh spinach, washed and chopped

Whipping Cream

4 tablespoons whipping cream


2 tomatoes, chopped


2 tablespoons chopped fresh basil

Salt and Pepper

salt and pepper to taste

Preheat oven to 450 degrees. Place 4 sheets of tin foil, each about 16 inches long, on work surface. Spread 1 tsp. butter over center of each foil. Place ¼ portion of spinach on top. Remove skin from salmon and cut salmon into 1 inch strips. Place ¼ of the salmon on top of the spinach and top the salmon with 1 tablespoon whipping cream, ¼ of the chopped tomato and basil. Season with salt and pepper. Dot with 1 tablespoon butter.

Bring sides together and fold packet- making a loose packet.

Place packets, not touching, on a baking sheet and bake at 450 degrees for 7 minutes.

Cook Time: 7 minutes
